Instructions
- In a medium saucepan, mix together granulated sugar, corn syrup, and water. Cook over medium heat, stirring until the sugar dissolves.
- Once it comes to a boil, stop stirring and let it bubble until it reaches 240°F (this is known as the soft ball stage). You can use a candy thermometer for accuracy!
- While the syrup is heating, in a large mixing bowl, beat the egg whites and salt until soft peaks form.
- Carefully pour the hot syrup into the beaten egg whites while the mixer is on low speed. Gradually increase to high speed and continue to whip for about 10 minutes until the mixture is thick and glossy.
- Add peppermint extract and, if you want, a few drops of green food coloring to give those marshmallows a fresh minty hue.
- Grease a 9x9 inch pan and dust the bottom with a mix of powdered sugar and cornstarch.
- Pour the marshmallow mixture into the prepared pan, smoothing it out with a spatula. Dust the top with more powdered sugar and cornstarch. Let it sit uncovered at room temperature for about 4 hours or overnight, until set.
- Once set, turn the marshmallow slab out onto a cutting board and cut into squares. Dust the cut sides with more powdered sugar and cornstarch to prevent sticking.
